The rules of the Fromage!
We all agree, le fromage est délicieux. But it doesn’t mean you can jump on your platter without knowing what you are doing, non non non!
There are rules that must be followed and no it is not just for the sake of rules. There is a very good reason for it! We want your pallet to have the best experience possible!
First of all, every decent platter should have sections:
The soft section: Brie, Camembert, Coulommiers.
Le Coulommiers
The pressed section: Cantal, Comté
Le Cantal
The blue section: Roquefort, Morbier
Le Morbier
The Goat section: Crottin de Chavignol, Banon, Pouligny Saint Pierre

A circle of fromages:
Ensuite, the cheeses should be eaten in a certain order and so the platter (or the individual plates) need to be arranged in a circle, clockwise, going from the mildest cheese (outside of the circle) to the strongest cheese (inside of the circle). Otherwise, we may start your dégustation with a very strong cheese and your pallet will not taste the milder ones for their juste valeur. That would be sad!
